There is an additional setting called as “Post Only Modified Fields” in forms
According to this rule, if no activity fields are modified, the activity will not be posted.
In one of the cases this was enabled and a task was completed but activity was not updated associated with the task. Upon checking the form this setting was enabled. I checked the dynamic form and only opportunity fields were updated and activity fields were not updated so the related activity was not posted
